Pollo ai Peperoni - Chicken with Peppers

Are you stuck in a rut? Are you fed up of always eating fried chicken?  Are you looking for an easy and healthy recipe for all the family? Do not fear- we have the answer! Try this great traditional Roman chicken recipe!!  Pollo ai Peperoni is super tasty and so fast and easy to do! This recipe comes from the beautiful area of Castelli Romani (Roma)!

Serve with home-made crusty Italian bread.

Don't forget , Scarpetta* is mandatory! 


*Scarpetta is the Italian word meaning 'to clean you plate with bread'!

Prep: 1h 10min -  Level: Easy - Serving: 4



- 800gr Chicken

- 100gr Tomato Pulp

- 1 Red Pepper

- 1 Yellow Pepper

- 1 Garlic clove

- 1/2 Glass of white wine

- 30gr Extra Virgin Olive Oil

- Salt&Pepper

- Thyme 





Start off by cutting the peppers, remove all the seeds and white parts inside.


Pour the oil into a large skillet or wok, add the garlic and heat the pan until hot. Add the chicken and stir until it turns opaque but not cooked through, about 5 min.


Pour in the white wine and let it evaporate, then add the tomatoes pulp. Stir for 2 minutes.

Add the peppers and season with salt, pepper and thyme. Put the lid on and cook on medium heat for 60 minutes.
